Tuscan Chex Party Mix
I don't want you to get the wrong idea here...but let me just tell you that we invented our very own Chex Party Mix. And it's a GOOD one. With the warm weather around the corner (I HOPE!!!) we came up with a recipe to use for warm weather entertaining. This spring...we are bringing a little bit of Europe into our backyards… This play on the traditional Chex Party Mix is one that can be used in several different ways and is a mix that includes fresh herbs that you can find at your local market. The Tuscan Chex Party Mix can be served at the bar along side a variety of crisp white or sparkling white wines; as an herbed crouton mix to a green salad (we would use romaine and radicchio) or alongside skewers of grilled shrimp. Tuscan Chex Party Mix – by Little Miss Party: Cook time: 5-10 minutes prep time, 5 minutes cook time Makes: 12 servings Ingredients: 2 cups Corn Chex cereal 2 cups Wheat Chex cereal 1/3 cup extra virgin olive oil 2 cloves garlic, minced 1 cup shredded mozzarella cheese ¼ cup Parmigianino (or more if you desire!) ½ cup chopped sun-dried tomatoes handful of each – chopped fresh herbs (we used Italian parsley and oregano) Directions: 1.) In a small bowl stir together the minced garlic and olive oil. 2.) In a large microwavable bowl, combine the cereals and garlic & olive oil mixture till the cereal is coated. Microwave on high for 2-3 minutes stirring after each minute. 3.) Add in the shredded mozzarella cheese for another 2 minutes stirring after each minute. 4.) Stir in the chopped sun-dried tomatoes and fresh herbs. 5.) Finish off with grated Parmigianino cheese. Enjoy!
