Red Carpet Rolls
The Oscars are creeping up on us airing Sunday February 22nd and I am desperately trying to cram in all of the movies before the big awards show. I most recently caught American Sniper and Birdman. BOTH outstanding films! I'm also trying to come up with a red carpet worthy meal to serve to our friends who come over every year to watch with us. It's a couple we've been friends with forever who live in our building. They roll on down to our place, we cook a big meal and eat while the awards are doled out. This year our menu will consist of: Meatball sliders with "red carpet rolls" Lip smackin' stacks of tomato and mozzarella cheese Martini mashed potatoes Cranberry crush Now let me tell you how to put this fancy sounding meal together... Meatball sliders: I picked up a bucket of balls from my local Meatball shop. Chicken with mushroom gravy and Spicy meat. YES YES I cheated ok! So what? I don't always have time to cook! Sometimes I need a little help. The red carpet rolls that I coined...are from King's Hawaiian found in many grocery stores. Have you ever tried one of these buns? They are outrageous. The are soft, buttery tasting and sweet! Red carpet worthy. Ok everything else is super easy to make yourself so pay attention... Slice a tomato and a ball of mozzarella and layer into a stack. I hit with a little olive oil and balsamic vinegar and topped with red glitter lips inspired by all of beauty that will be walking down the red carpet at the Oscars. For the mashed potatoes I took 4 potatoes (1 per person) and chopped them into cubes. I placed in a pot and filled with cold water. Bring to a boil and cook for about 8-10 minutes, till the potatoes are easily pierced with a fork. Drain and put back into the pot to dry. Add a splash of milk and pat of butter as well as salt and pepper to taste. I served in stemless martini glasses and garnished with chives. The PERFECT side for your meatball sliders. To drink I mixed up chilled cranberry juice with champagne a splash of club soda and a squeeze of lime. Since we are watching the show on the couch - I set out trays so my guests could make a "tv dinner" and eat in comfort. Now it's your turn to try and win.
