Piña Colada Shooters
We love any excuse for fruity frozen drinks here at LMP, and last week, Seri's best friend Lindsey was visiting from Toronto! Plus, Gavin (Seri's 6-year-old son) has been asking me to make him a non-alcoholic version for MONTHS now.
Well, this week I obliged! I picked up a fresh pineapple at the farm stand and got to work. Lindsey suggested that we make a piña colada shooter, since we all agreed that an entire one can be a bit heavy. How brilliant is that??
Here's what you need: -fresh pineapple cut into chunks -fresh pineapple wedge for garnish -pineapple juice -can of coconut milk -white rum -ice -blender
Here's what to do:
1) Add 1.5 cups of ice, 1/2 cup of diced pineapple, 2 oz pineapple juice and 3 oz of white rum to blender. 2) Open can of coconut milk and stir with spoon. Add 2 ounces of coconut milk to blender. 3) Blend all ingredients until smooth. 4) Pour mixture into shooter glasses... depending on the size of the glass you should have enough for 4!
5) Garnish each glass with a fresh pineapple wedge.
Voila!
These were so ridiculously delicious, and just the right amount of sweet. I made a version sans rum and Gavin was very happy with the outcome!
