Ready, Set, Weekend with Simply Beautiful Eating

Two of my favorite things – blueberries and waffles. When an opportunity came my way to become an editor on the feedfeed, I literally jumped for joy. I did. I really did. And I also maybe squealed a little too.

Simply Beautiful Eating has been an incredible journey for me both on this blog and instagram account. Over the past 18 months, I have realized that being connected with people from all walks of life worldwide is mind boggling. I have come to know some as friends and have even had the opportunity to meet other instagrammers in person.

The feedfeed has always intrigued me as a common ground for home cooks, chefs, foodies and people who just love food to gather and share their creations. It’s a wonderful feed to follow. Their website is full of fabulous photos, recipes and information. Here’s what they are all about in a nutshell.

The feedfeed is a crowdsourced digital cooking publication and community. Co-founders Julie and Dan Resnick’s role is to facilitate all the amazing people in the feedfeed community connecting and inspiring each other on a daily basis. They combine the content shared by home cooks, chefs, and bloggers into awe inspiring categories that reflect trends from kitchens around the world. They have also recently introduced dozens of community editors who help to curate categories in their areas of expertise as well as add personal notes on recipes that are shared.

Enter me! I’m both flattered and honored to be part of this collective group.

To commemorate my first month on the job, I made a combo of belgian waffles with blueberry infused maple syrup. I have to admit, this was probably the best waffle recipe I have ever made. They turned out light, puffy and I couldn’t resist doing a blueberry maple syrup reduction to drizzle over these heaven on earth waffles.

Belgian Waffles with Blueberry Infused Maple Syrup

1¾ cups flour 1 tablespoon baking powder ½ teaspoon salt 1¾ cups milk 2 large eggs ½ cup melted butter 1 teaspoon vanilla extract Blueberry Infused Maple Syrup 1 cup fresh blueberries, ½ cup real maple syrup Blueberry Greek Yogurt, optional garnish but super delish

Whisk the flour, baking powder and salt together in a medium bowl. In another bowl, beat the milk, eggs, melted butter and vanilla extract. Pour the milk mixture over the dry mixture and stir with a fork until just combined. Let sit five minutes to allow the baking powder to activate.

While you're waiting heat up your waffle iron. Pour, or ladle, enough batter to cover about ⅔ of the surface, it will spread so don't overload the batter. My waffles are usually done in 4 minutes, if you have a waffle iron that has a red button on it and signals that they are ready, I'm a little jealous. Continue making your waffles until all the batter is used up. Serve warm with blueberry maple syrup.

To make the syrup - you are not going to believe how easy this is.... Place blueberries and maple syrup in a small saucepan. Cook over medium high heat, continue to stir until berries are mushy and syrup is thickened. Strain through a seive and serve over waffles with additional fresh berries and yogurt.
