Recipes for Every Type of Muffin Lover
This month when I was planning out blogs I stumbled up on #NationalMuffinDay which is tomorrow, February 20th. While I’m not so much of a muffin lover, I know a ton of people who keep them on hand for breakfast and to snack on throughout the day. It’s really a no brainer for most, because one tray of muffins can last you almost two weeks!
So if you’re someone who’s looking to meal prep or just take a little less effort out of what to eat, check out some of the recipes below from our blog.
DARK CHOCOLATE CRUNCH ZUCCHINI
If I’m gonna have a muffin, it’s definitely gonna be chocolate chip. I’m not a huge chocolate person but I do enjoy that extra bit of sweetness. I love that this recipe incorporates zucchini! So while you’re snacking on it, you can put yourself at east knowing that there are hidden veggies. That’s what we call BALANCE!

I mean talk about a gorgeous. This is definitely a brunch muffin, yah know - food that is so pretty you have to take a picture of it for Instagram. I know you know what I’m talking about!! But seriously, the streusel topping on this definitely not on the healthy side but it is so decadent!

This is like an everything in the kitchen sink type of muffin. No fancy ingredients, just throw whatever you’ve got in here. And for all of you banana lovers, this recipe includes them! I say that because I know banana muffins are VERY popular. The crunch factor from this crumble is also really great too!

You may be familiar with that one time we put together a Pinksgiving. Essentially it was our Friends-giving but we made everything pink. Talk about a fun day at the office! Since it was fall, Maggie made these pumpkin muffins as our dessert. And of course, we had to make the frosting pink to match the rest of our table! This recipe is super easy to recreate, and be sure to get pretty liners like we did to complete the look!
BLUEBERRY GREEK YOGURT STREUSEL MUFFINS
Blueberry is just a classic muffin flavor, so the list really wouldn’t be complete without this one! This recipe also includes greek yogurt which makes it on the lighter side. If you want to serve these up for some guests, I’d suggest doing what Debi did here with these tossed blueberries on a tray! So pretty and so simple.
