Peachy Mint Vodka Cocktail
For me, there are few things more refreshing than fruit in the summertime. You just don’t see the same level of produce during other times of the year so I like to take FULL advantage of my favorite fruits while I can.
This week when I went to the grocery store I spied some juicy peaches and I couldn’t resist. I’ve been trying to stray away from baking too many yummy desserts (i.e. peach cobbler, YUM!) while I’m living without a roommate in fear that I will eat it all myself. But who says I can’t make a cocktail or two on a hot evening?!
As I was looking for ingredients to whip something up, I remembered my mint plant, which is soon to be re-potted into a gorgeous planter I’m painting- stay tuned for the DIY post! So I figured a little peach, a little mint, a little vodka… I’ll make it up as I go along. Since so many recipes online pair peach with bourbon, I wanted to make something new that was way more up my alley.
Ingredients for 2 cocktails:
1 peach
2 sprigs of mint
1 tablespoon agave or honey
1/2 cup water
4 oz. vodka
plenty of ice
There’s only one step here- BLEND! Throw all those ingredients into a blender and mix ‘em up. Garnish if you want to make it look pretty with peach slices and sprigs of mint! Cool, sweet, fresh. Cheers!
