If you had a summer like we did it was filled with hot dogs, ice cream, copious amounts of buttered corn and other "treats" that we often regret come fall. Today I made a super healthy lunch that can be transformed into so many different meal choices. Great for those who are daily free or vegetarian.

Hoisin Zuchinni Noodles (for one)

Ingredients:

1 teaspoon olive oil

1 yellow zuchinni

1 green zuchinni

2 tablespoons Hoisin (if you don't have hoisin teriyaki would be a perfect alternative)

2 scallions (garnish)

sprinkle of black/white toasted sesame seeds (garnish)

Directions:

Using a spiralizer create the noodles with both zucchinis

Prepare oil on pan over medium heat.

Toss zucchini noodles in warm oil for about 3-4 minutes, pouring out excess liquid as you go. I like my noodles with a bit of a bite, if you want them softer keep them in longer.

Pour hoisin in pan, toss with noodles.

Garnish with sesame seeds and scallions

If you're looking to add a protein try tofu, shrimp, chicken or beef. The options are endless!
