The sunshine has finally peaked out of the clouds and today felt like a true spring day! The birds chirping and heat radiating reminded me of an epic summer BBQ we had last year. Juicy ears of of corn were served up with this homemade honey lime butter. Boy was it a hit! Guests were eating it by the spoonful. Super easy, super delicious, and such a crown pleaser. Check it out... Adapted from a recipe I found in Women's Day. Ingredients: 1 stick unsalted butter 1 tbsp. honey 2 tsp. lime zest 1 tsp. crushed red pepper flakes 1 tbsp. chopped fresh chives Kosher salt to taste Directions: Combine the butter, honey, lime zest, crushed red pepper. Fold in the chives, add salt to taste and serve. Can be spread on anything: corn, was a cracker (shown in photograph), baguette, steak, scones etc. I can promise, this butter will be the star of your next BBQ. Enjoy! M xx
