Lavender Blackberry Mojito
I'm constantly searching for new inspiration for cocktails to make you guys every week, in an effort to keep things new and exciting. Thankfully, we have plenty of magazines at LMP summer headquarters.
Seri brought back some really fun magazines from a recent trip to Toronto, and I found this weeks cocktail in one of my favorites, Food and Drink. This Lavender Blackberry Mojito gives a fun, purple twist to a summer time favorite.
Here's what you'll need:
-white rum (we used Bacardi) -club soda -blackberry liqueur -lavender sprigs -fresh limes -lime juice -fresh mint -fresh blackberries -white sugar -water -ice -cocktail shaker
Here's what to do:
1) First, you'll need to make the blackberry simple syrup! Combine 1 cup sugar and 1 cup water in a small saucepan. Bring to a boil and stir. Reduce to a simmer and add 1/2 cup of fresh blackberries to mixture. Muddle berries and add a few sprigs of lavender. Let simmer for 10 minutes. Strain blackberries and lavender sprigs from mixture using a fine mesh strainer. Let simple syrup mixture cool in fridge for at least 20 minutes. 2) Now that your simple syrup is cooling, you can start the rest of your drink! Add ice to each of your glasses and your cocktail shaker. 3) Add 3 oz of rum, 2 oz of blackberry liqueur, 2 oz of lime juice and 2 oz of blackberry simple syrup to cocktail shaker on top of ice. Close cocktail shaker and shake lightly. 4) Add club soda to cocktail shaker to fill it up and shake gently. 5) Pour mixture into each glass to fill. Add fresh blackberry, lime wedge, lavender sprig and fresh mint for garnish.
VOILA! This cocktail is especially beautiful, light and refreshing. The slight lavender flavor makes it unique, but it still tastes like the traditional mojito that we all know and love. Serve this up at your next girls night with some cheese and crackers and we promise that everyone will love!
