Irish Coffee - The Best Way to Warm Up on a Ski Weekend
A few months ago, a bunch of my friends from college and I decided to coordinate a ski weekend in Upstate New York. My best friends parents own this insanely gorgeous cabin, affectionately known as "The Lodge" in the picturesque Catskills, free from cell service and wireless internet, and only 20 minutes away from a few awesome ski mountains. The Lodge is INSANE. It has two gorgeous stone fireplaces, a full bar, a pool table, piano, ping pong table, foosball table, and beds for 12 people. The list goes on and on. At the final count, there ended up being 14 of us in attendance for this epic weekend. 14 20-somethings in a remote log cabin for a whole weekend... good idea, right? I decided to tap into my party-planning/ hosting experience and make a fun cocktail to help warm all of us up on our snowy weekend getaway. My friends voted, and Irish Coffee was the favorite. I found this super simple recipe for Spiced Irish Coffee -- 5 ingredients? Now you're speaking my language. Here is what you will need (for two drinks): For the pumpkin-spiced whipped cream: -1/2 cup of heavy cream -1 1/2 tsp. sugar -1 tsp. of pumpkin spice For the Irish Coffee: -1 1/2 cups freshly brewed coffee -1 tbsp. sugar -4 tbsp. whiskey (or more, if you're like my friends) For the whiskey, I know that my friends like Jack Daniels, so I went with that, but you can use whatever brand you prefer! To make the whipped cream: -Whip heavy cream, sugar and pumpkin spice into stiff peaks To make the Irish Coffee: -Divide all ingredients between 2 glasses -Top each drink with the whipped cream you just whipped up (HA) -Sprinkle the whipped cream with more pumpkin spice See how easy that is?! Needless to say, it was a hit, and was the perfect way to warm up AND caff up before a day on the slopes. Enjoy! xoxo, Abby
