Comfort Food Round Up with Simply Beautiful Eating

So naturally being inside all day, all I want to do is eat….

I am totally a comfort food type of girl. Don’t get me wrong, I love a good salad (used to be my favorite food as a kid, weird I know) but now I’m all about creamy, warm, deliciousness.

So the other day while I was browsing the blog for some of Debi’s (Simply Beautiful Eating) recipes, I thought to do this little round up so you could see the meals I’m planning to make!

Cajun Chicken, Sun-dried Tomato, Spinach, Mac & Cheese

Now as you may have heard Seri mention on Instagram randomly here and there, I am a vegetarian so basically can’t eat the chicken portion of this dish. But back when I did eat meat, I would have LOVED that the chicken in here was cajun. I love spice! What really stands out to be about this dish is the ingredients mixed into the mac & cheese.

Omelette with Broccoli, Red Onion, White Cheddar, and Feta Cheese

Calling all breakfast lovers! This ones for you. I myself have a boyfriend who is OBSESSED with breakfast. It is by far his favorite meal of the day, so I put this in here for him. The two things I love most about this recipe are the use of broccoli (which I never would think to put in an omelette) and the different use of cheeses! This would definitely be a good way to start the day or have for brunch!

Potato Soup with Turmeric Greek Yogurt & Pistachios

Another favorite of mine - potato soup! This to me is the definition of warm deliciousness. I am definitely a potato lover… so thats why this dish appeals to me so much but also because Debi puts such a fun spin on this dish. Using non traditional ingredients like Greek yogurt and pistachios is a great way to make this bowl of goodness something worth talking about.

Loaded Sweet Potato Waffle Fries

I know I just talked about a potato dish but these are a different type of potato, okay!! Another thing I crave when I want a solid comfort food is fries. Waffle fries are definitely a superior fry in my opinion, but to make these even more delicious Debi loaded them up with amazing toppings like cheese, broccolini cheese balls, and greek yogurt. It’s basically like a waffle fry x nacho mix and I love it!

Twisted Tex Mex Cheese, Kale, and Pesto Puff

This list would be incomplete without some type of bread in the mix. First of all, this is the prettiest piece of bread I’ve ever seen - I cannot promise you that mine is going to look this nice! This is perfect to have as a side dish for a meal or just to bake and have ready for a snack! Snacking is probably what I’ll be eating it for because you know chips and dip can get kind of old after a week.

So there you have it! Five comfort food recipes that I’ll be making during my time inside. I can’t wait to start!
