A tasting with the new kids on the block

A few weeks ago I was hanging out with a friend and she started telling me about how her brother is starting up a catering company with some of his buddies. She was looking for advice to pass along to him and I explained how when we meet a new caterer, we schedule a tasting with them so we can get a feel for their work and must always know what the food tastes like so we can ensure we’re recommending good food to our clients if we end up working together in the future. I also explained that when a new caterer does a tasting for us we set up our table and snap tons of photos and of course share them.

My friend loved this idea and was psyched to make the connection with her brother. We quickly got a date on the calendar and before I knew it my friend’s brother, Ricky was in my kitchen cooking a wonderful dinner for me and my fam.

Ricky and his team are calling themselves Herban Plate. A play on the “urban” city that they are cooking in. They started us off with a variety of appetizers, mostly vegetarian and in the most creative way. Our menu consisted of:

1st Course/Canapés
Crispy ‘Crabless’ Cakes, Cabbage Slaw
Potato, Leek Tater Tot
Summer Melon Salad, Heirloom Tomato Granita, Strawberry
Artichoke Oreganata


2nd Course
Asparagus Carpaccio, Burrata, Tarragon Vinaigrette, Pickled Green Strawberries

3rd Course
Beet Tartare, Pheasant Egg Confit, Brioche Cracker

4th Course
Nashville Hot Honey Fried Chicken & Biscuit
(Vegetarian) Nashville Hot Honey Fried Maitake Mushroom

I can now honestly tell you that the food was fantastic and these guys were an absolute pleasure to have cooking in my kitchen. If you’re looking for a caterer for your next party or an in home chef to cook for your next dinner party…these are your people!
