Chef Luke makes a Cinco De Mayo Dinner

Guess who's back....back again. Chef Luke! And this time he's cooking it up with our favorite kids Chef Daniela of Kulinary Kids.

Daniela runs in home cooking classes for groups of kids in NYC and is a gem when it comes to dealing with those little monsters. She's so patient and happy to help them learn about new foods and how to cook in the kitchen.

Today Daniela is sharing some of her amazing recipes with Chef Luke, all perfect for a Cinco De Mayo meal. Your kids will love these dishes and can help out just like you'll see here in the video that Maggie put together for us...

Mexican Street Corn Salad
Ingredients:
2 cups fresh or frozen corn
2 Tbsp olive oil
3 Tbsp Mayonnaise
1/2 cup cotija cheese
2 Tbsp fresh lime juice
1 Tbsp jalepeno, finely chopped
1/2 cup fresh cilantro, finely chopped
2 Tbsp red onion, finely chopped
1 garlic clove, minced
1/2 tsp chili powder

Directions:
1. Heat oil in a pan and cook corn for 7-8 minutes until lightly charred.
2. Chop jalepeno, cilantro, onion and garlic in a mini chopper. Mix with mayonnaise, cheese, lime juice, chili powder, salt and pepper in a large bowl.
3. When corn is cooked, add it to the bowl and gently fold it in with the other ingredients.
4. Eat and enjoy!

Avocado and Kale Crema
Ingredients: 
1 ripe avocado
3-4 kale leaves, de-ribbed and torn
1/4 cup plain Greek yogurt
1/4 cup water at room temp
2 Tbsp olive oil
1 garlic clove
Salt to taste

Directions:
Add all ingredients to blender or chopper and combine until smooth. Add more water if necessary to reach desired consistency.
