Watermelon Gin Fizz

It's summertime. You're looking for a refreshing, healthy snack. You take a trip to the grocery store and you see it... watermelon! It's perfect! You take it home, cut it up, and realize.... holy moly... this is a LOT of watermelon... how am I going to eat all of this??

Sure, you're family will help you, but they will probably get sick of it after a few days, and there will inevitably be a ton left over. This is what happened at Luke's 4th birthday Pirate Pool Party... we had a TON of watermelon leftover, just sitting in the fridge for days! So, I decided to use it before it all went bad... and make a cocktail out of it!

I decided to whip up a Watermelon Gin Fizz, using the leftover fruit and turning it into a purée... genius! A new, exciting and adult-friendly way to enjoy a classic summer staple.

Here's what you need:

-about 10 watermelon slices -2 oz. your favorite gin -ginger ale -fresh basil leaves -ice

Here's what to do:

1) Cut the rind off of your watermelon slices.  Cut the red fruit into cubes, and put into a blender.  Set your blender to the "purée" function.  Purée for about 30 seconds, until super smooth and all chunks have been puréed. Set aside.

2) Add ice to both of your glasses. Pour 1 oz. of gin into each glass on top of ice.

3) Pour one half of can of ginger ale into each glass.  Add watermelon purée on top and fill glass the rest of the way.  Use spoon or straw to stir and mix all ingredients.

4) Add fresh basil leaf for garnish, and your straw.

So simple! This concoction is the definition of refreshing, and the perfect way to get rid of all of that leftover watermelon.  I guarantee that you will love it!
