Lemon Thyme Gimlet
I am a huge Gilmore Girls fan. I grew up watching the show when it was on TV, bought all of the DVD's to binge watch on my own the minute that I had the money to do so, and rejoiced when they came to Netflix. And now the revival!! Every day, I rejoice at each new announcement about the cast or pictures released from set. It's pretty much my dream come true!
I've been watching the series over in preparation for the revival, and in one of the episodes, the ever-classy Emily Gilmore, in a bout of frustration, screams "RICHARD, I need a Gimlet!!!!" - Talk about inspiration! I know I had to make a gimlet to honor this incredible woman.
I decided on a Lemon Thyme Gimlet with Simple Syrup. This cocktail is light and refreshing and perfect for spring, with the perfect blend of sweet and sour, just like Emily!
Here's what you need:
-fresh lemons -fresh thyme -simple syrup (sugar and water if you'd like to make your own) -gin -ice -cocktail stirrer
Here's what to do:
1) To make your simple syrup, bring 1/2 cup sugar, 1/2 cup water and some fresh thyme to a low simmer in a small pot. Stir until sugar is dissolved. Remove from heat and let sit.
2) In your cocktail glass, add ice, 1 oz fresh juice of lemon, strained, 1 oz simple syrup.
3) Add 2 oz of gin and stir. Garnish with fresh thyme and a lemon slice.
