Ice Cream Sandwiches with a twist
You love ice cream right? Who doesn't? How about chocolate chip cookies? Uh huh! We do! Well last week, we did a wedding for pralines and cream ice cream + Tates chocolate chip cookies. That's right...Mazel Tov!
There's not much to making ice cream sandwiches when you're using store bought ingredients so we went the extra mile. Here's how...
First off, you'll need to take the ice cream out of the freezer and let it sit on the counter for a few minutes to soften. If the ice cream is too hard it will break the cookies as you are creating your sandwiches.
Lay one cookie flat and top with a scoop of ice cream. Top the ice cream with another cookie and press gently together. I put each cookie on a baking sheet lined with wax paper directly in the freezer as I finished each one.
To make things fun, I added toppings to my ice cream sammies. To start you'll need melting chocolate - chips or discs. Melt your chocolate in a bowl and have a spoon handy.
I used a variety of toppings: shredded coconut, chopped walnuts and rainbow sprinkles.
I covered half the cookie with melted chocolate and then I dipped it into a different topping for each ice cream sandwich. As soon as I finished each - I put it right back onto my sheet pan in the freezer.
