Gearing up for a green Spring
It's hard to believe it's already March 5th here in NYC, considering it's snowing AGAIN today...just to add to the mounds of snow already on the ground. In retaliation to this current snow storm, we decided to set out a very healthy, spring-inspired brunch spread. After months of comfort food eating, we thought it would be nice to lighten things up a bit...oh and we went with all green, hoping this would make spring come a little bit sooner. We also love this for a St. Patty's Day spread! We started with a short stack of whole wheat pancakes which we made green by adding a few drops of food coloring to the batter. Topped off with a gold flag topper and some real maple syrup, this is a brunch both kids and adults will enjoy. Next we turned to our girl Clare from Clarelicious for these adorable and very healthy kale and apple cakes. Packed with all sorts of "good for you" ingredients, these heart shaped cakes sure do pack a nutritional punch, while still satisfying everyone's sweet tooth. We decided to get involved in the healthy smoothie craze with this kale avocado banana smoothie recipe we found. I was hesitant it would taste bitter but the banana really helped to sweeten it up. Delish!! To turn this spread into a St. Patty's themed brunch, we added some cute shamrock napkins and green and white polka dot straws, each adorned with a shamrock sticker on top. These are all items you can easily pick up in your local party store. We used our favorite silver striped and star plates from Meri Meri to pull the whole setup together.
