As the weather cools down, I can't help but to crave warm comforting soup. If you're looking for a super easy and delicious staple that you will never forget, check out my friend elyse's (elyse leannacatering) French onion soup recipe. There's something about that ooey gooey cheese that gets me every time. Perfect for a Sunday night in cozying up with the cat watching Netflix. Or your family haaa they will love you for it!

Elyse's French Onion Soup

Serves 4Ingredients: 1 small baguette 1 Tbsp. olive oil 1 Tbsp. butter 1 large, Vidalia onion, sliced 2 cloves of garlic, chopped 2 sprigs of thyme, leaves removed and roughly chopped

1/4 cup sherry wine 4 cups beef stock Salt and pepper 1 1/3 cups grated gruyere cheese

Method: Pre-heat oven to 400 degrees F. Slice baguette and brush with olive oil. Place in the oven and bake until golden and toasted. Remove from oven and turn oven on to broil. Heat a large saucepan over medium- high heat. Add butter, once melted add onions, garlic and thyme and sauté until softened. Lower heat and slowly cook until onions start to become golden and caramelized. Pour in sherry and scrape any brown bits off the bottom of the pan with a wooden spoon. Allow the sherry to reduce by 1/2, about 2 minutes then pour in the stock. Bring to a boil, then lower heat and allow to simmer for 10-20 minutes to infuse flavours. Season with salt and pepper. Divide the soup mixture into 4 oven proof bowls. Top each bowl with a couple of toasted baguette slices and 1/3 cup of grated cheese. Place under the broiler and bake until cheese is melted and bubbly. Remove from oven and serve, be careful the bowls will be VERY HOT!!!!
