Ready, Set, Weekend with Simply Beautiful Eating

Hello! I have a super de duper easy meal for you today using Patak’s 3 step meal kit! I mean, this seriously couldn’t be a more perfect recipe for a busy weeknight or for that matter, ANY night.

Let’s talk about tikka masala sauce for a sec. Using this kit, you’re going to get a beautiful compilation of warm spices plus an aromatic blend of exotic flavours in the exquisite sauce that will coat your tofu cubes.

It’s all you will ever want from a perfect tikka masala recipe, but at the same time, this recipe is enhanced with the addition of yummy firm cubes of tofu and the addition of a healthy side of brown rice and peas. Even if you’re not a big fan of tofu, this recipe will make you fall in love with it and I’m willing to guarantee it. You guys have to trust me. Honestly, this tikka masala is so scrumptious that not only will you want second helpings, you will also want leftovers for lunch.

I know I’ve said this before but I love using extra-firm tofu in my recipes. It works so well in all my dishes that I never bother reaching for any other tofu at the supermarket. Just make sure to press the block of tofu with something heavy for few minutes before using it. This is the key to a getting a perfect texture for the cubes with less moisture. Nothing worse than a soggy piece of tofu. Agreed?

So, you may be wondering what exactly is TIKKA MASALA?

A tikka masala recipe is often well known using chicken as a the main protein. It’s made with butter, heavy cream, a lot of spices, and garlic.

There are different versions of the dish that differ by which spices are used. When you check out the ingredient list on the Patak’s meal kit, you will see what blend of spices they include. Here’s the list in case you’re curious:

The Sauce Packet: water, onion, cream, tomato puree, tomatoes, vegetable oil, sugar, ginger, garlic, corn starch, cashews, salt, lactic acid.

The Spice Paste Packet: water, spices, mustard, vegetable oil, salt, corn flour, tamarind, garlic powder, citric acid, fenugreek leaf, cilantro.

The Spice Packet: Cumin seeds, dried red chili pepper, green cardamom, bay leaves, fenugreek leaves.

Just to let you know, when I tasted that first bite, it was a sheer delight.  A restaurant style tikka masala recipe without all the fuss and muss. Little secret? I’m not even going to attempt to make my own sauce for this recipe.

Why? Because as you can see, it’s as easy as 1, 2, 3 !

TIKKA MASALA TOFU

·      1 block extra- firm tofu

·      1 Patak's 3 step Meal Kit - Tikka Masala

1.  Prepare tofu by pressing all the moisture out. I usually wrap the block in paper towel and weight it down with a cast iron skillet for at least 30 minutes.

2.  Cut tofu into bite size cubes.

3.  Prepare Patak's 3 step Meal kit according to directions and add the tofu in during the process. Serve with brown or white rice if desired.
